Instructions

Step 1
Scrub the potatoes and slice in half.
Step 2
Place the potatoes on a lined sheet pan skin side up and drizzle with oil.

Cover and bake at 400 for 30 minutes.
Step 4
Uncover the pan and smash the potatoes with the bottom of a glass cup or anything sturdy and flat. bake uncovered for another 20-30 min or until crispy. For the larger potatoes, broil for an extra five minutes while keeping an eye on them so they don't burn.
Step 5
While the potatoes are cooking, combine the mayonnaise, dill, pickles, mustard, and kosher salt.
Step 6
Mix well. When the potatoes are still hot, toss them in the mayonnaise mixture. If you are using larger potatoes, cut them into quarters before tossing in the dressing.
