Instructions
Step 1
Preheat oven to 400 F
Step 2
Dice 4 medium apples (approx 4 cups) into approx 1/4 inch cubes
Step 3
Put wet ingredients and sugar into stand mixer with batter paddle. Mix on low
Step 4
While wet ingredients are mixing, blend dry ingredients in separate bowl
Step 5
Spoon dry ingredients into wet
Step 6
Scrape down sides of mixer bowl then add apples and mix slowly
Step 7
Portion into muffin cups with liners and bake for approx 25 minutes
