Ingredients
6 servings
olive oil
1 teaspoongarlic
minced
4 cupsbaby spinach
coarsely chopped
¼ teaspoonsalt
pepper
fresh ground
6eggs
large, thoroughly whisked
½ cuplowfat cottage cheese
½ cupchick peas
rinsed, drained, and coarsely chopped
3 ouncesfeta
crumbled, or grated
2 tablespoonssun-dried tomatoes
thinly sliced
1 teaspoonCalabrian peppers
crushed
½ teaspoonsea salt
4pepper
grinds
¼ cupfresh herbs
dill, oregano, parsley, mint, thyme
Instructions
Step 1
Preheat oven to 375℉/181℃
Step 2
Grease or spray your muffin pan.
Step 3
Add a drizzle of olive oil to a pan on medium-high heat. Add garlic, spinach, and salt. Wilt (1-2 minutes). Remove from heat.
Step 4
Whisk together all ingredients thoroughly.
Step 5
Fill each muffin section about ¾ full. Place in preheated oven.
Step 6
Bake until the centers no longer jiggle, and they have some golden brown color – 17-22 minutes.
