Ingredients
6 servings
4boneless skinless chicken breasts
cut into one-two inch cubes
2 tablespoonsextra virgin olive oil
¾ cupbrown sugar
use less if desired
4garlic cloves
minced
1 tablespoonfresh ginger
minced
¾ cuplite soy sauce
use less if sensitive to sodium
¾ cupwater
or chicken broth
1 cupcarrots
chopped
1 teaspoonred pepper flakes
1 tablespoongarlic powder
2 tablespoonscornstarch
¼ cupgreen onions
chopped
1 teaspoonsesame seeds
2 cupsbasmati rice
2 cupswater
2 tablespoonsherbed butter
or unsalted
¼ teaspoonsalt
Instructions
Step 1
Heat up your pressure cooker: press Sauté -> click on the Adjust button -> select More to get the Sauté More function. Wait for the Instant Pot indicator to read HOT.
Step 2
Add the oil to the hot Instant Pot, add the chicken and sauté for 2-3 minutes. Cook until it just starts to get golden, stirring constantly.
Step 3
Deglaze the pot with 1/4 cup water and scrape any stuck bits with a wooden spoon.
Step 4
Add the rest of the ingredients (except rice, water for rice, butter, and salt) to the pot and stir until combined and coated in sauce.
Step 5
Add the rice, salt, and two cups of water to an Instant Pot safe dish. Stir to combine, cover with aluminum foil, and place on a trivet over the chicken.
Step 6
Close the lid and pressure cook at High Pressure for 6 minutes + 10 minutes Natural Release. Release remaining pressure and open the lid.
Step 7
Remove the rice pot and let it rest covered for 5-10 minutes. Fluff the rice with a fork before serving.
Step 8
In a medium bowl, combine 2 tablespoons of cornstarch with 1/4 cup water until smooth. Add to the Instant Pot and cook on Sauté function until sauce thickens.
Step 9
Turn off the Instant Pot and serve the chicken over rice, garnishing with fresh chopped green onions and sesame seeds.
