🍲 Daniel’s Everything-But-the-Kitchen-Sink Chicken Soup (bold • zesty • cozy perfection) 🕒 Prep: 15 min 🍳 Cook: 40 min 🍽️ Serves: 4–6 --- 🥕 Ingredients 2–4 cups leftover baked chicken, shredded or chopped 1 tbsp butter or olive oil 3-5 carrots, sliced (garden fresh if possible) 2-3 potatoes, cubed 7–8 cloves garlic, minced. (4 minced, the rest whole) 4–6 cups chicken broth (or tetra pack + water) (or 4 cups broth + 2-3 cups water) 2½ cups butterfly noodles 🦋 2–3 tbsp apple cider vinegar Juice of ½ lemon 1–2 tbsp taco seasoning 2 tbsp allspice 1 tsp oregano 1-2 tsp Italian seasoning Lemon spice blend, 1–2 tsp (to taste) Salt & pepper, to taste Green onions 👩‍🍳 Directions 1. Sauté veggies: Heat butter or oil in a large pot over medium heat. Add carrots and garlic; cook ~5 min until fragrant. 2. Build the broth: Add potatoes, chicken broth, apple cider vinegar, lemon juice, and all spices (taco, allspice, oregano, Italian, lemon spice, salt, pepper). Stir well. 3. Simmer: Bring to a gentle boil, then reduce heat. Simmer 15–20 min, until potatoes are tender. 4. Add noodles & chicken: Stir in noodles and chicken. Simmer another 10–12 min, until noodles are tender and broth thickens slightly. 5. Taste & adjust: Add more lemon, vinegar, or seasoning to your liking. 6. Serve: Garnish with parsley or green onion and enjoy warm. --- 💡 Notes Thick, hearty, and packed with flavor — almost a stew. The lemon + ACV combo brightens the deep spice. Even better the next day!
