Instructions

Step 1
Fry peppers and onions in olive oil over medium low heat.
Step 2
When onions are translucent, add chopped garlic.
Step 3
When garlic begins to be fragrant, add the ground beef and mix in the vegetables.
Step 4
Add salt and pepper, a small amount of paprika and even less of cumin, and a good deal of chili powder.
Step 5
Cook until meat is cooked.
Step 6
Add can of pinto beans and heat through.
Step 7
Mix in cheese.
Step 8
Roll mixture into tortillas and place in greased casserole dish.
Step 9
Add 14 oz of red enchilada sauce
Step 10
Cover with cheese and bake until sauce is bubbling.
Step 11
Serve with sour cream and chopped tomatoes and avocados.
