High-Protein, Veggie-Loaded Crockpot Chicken Parmesan

Instructions

Layer ingredients in crockpot

Add chicken breasts first

Then all veggies except spinach

Pour marinara over top

Add garlic + seasonings

Cook

LOW: 4–6 hours

HIGH: 2.5–3.5 hours

Chicken should shred easily OR stay in chunks if preferred.

Stir in creamy protein

Stir in cottage cheese OR Greek yogurt at end.

This makes it velvety without Alfredo.
