Instructions
Step 1
Cook the pasta to al dente. Set aside.
Step 2
Sizzle the pancetta. Once crispy, set aside.
Do not drain fat.
Step 3
Whisk the eggs with the pecorino and pepper.
Step 4
Add a little bit of the fat and keep whisking.
Step 5
Strain the pasta al dented into the pan and add some cooking water.
Step 6
Once the water is all absorbed, turn off heat, add the cream and mix properly.
Step 7
Finish off with the pecorino and cheese.
