Instructions

Step 1
Preheat oven to 425 F
Step 2
Toss veggies: in a bowl, mix fingerling potatoes and baby carrots with 1 tbsp olive oil, salt, pepper, and a small pinch of tequila lime seasoning
Step 3
Season chicken: Drizzle chicken breasts with remaining 1/2 tbsp olive oil and coat both sides with tequila lime seasoning powder
Step 4
Arrange on baking sheet pan: place veggies on one side, chicken on the other
Step 5
Roast: bake 25-30 flipping chicken halfway. Remove chicken if done early and broil veggies 3-5 minutes for extra crispiness
Step 6
Finish and serve: Rest chicken 5 minutes before slicing. Add a squeeze of lime and sprinkle cilantro if desired
Step 7
Leftovers: store in airtight container up to 3 days; reheat or enjoy cold in a salad.
