Instructions

Step 1
Preheat oven to 400
Step 2
Brush the top of the tortillas with 2 teaspoons of the oil, and cut them in quarters. Place the tortilla pieces in a single layer on a large baking sheet. Bake until lightly browned and crisp, 6 to 7 minutes. Remoe from the oven and spread the top of the tortilla pieces with the refried beans.
Step 3
Heat the remaining 4 teaspoons of oil in a large skillet over medium-high heat. Add the onion, garlic, bell peppers, jalapeno, and cumin. Cook, stirring occasionally, until slightly softened, 5 to 6 minutes. Add the tomato and cook until slightly wilted, 1 to 2 minutes. Remove from the heat and stir in the chicken, cilantro, lime juice, and salt.
Step 4
Return the baking sheet to the oven and heat the refried beans for 2 minutes. Transfer to a platter and top with the chicken mixture, avocado slices, and cultured coconut milk.
