Tofu Stir-Fry with Vegetables

Ingredients

8 ouncesextra-firm reduced-fat tofu
cut into 1/2" cubes
6scallions
minced
¼ cupreduced-sodium tamari
¼ cupdry sherry
or apple juice
5cloves garlic
minced
1 teaspoonfresh ginger
grated
½ teaspoonground red pepper
⅓ cupreduced-sodium chicken broth
0.5onion
thinly sliced
1carrot
large, julienned
1 cupbroccoli florets
½ teaspoonchili oil
Instructions
Step 1
Combine the tofu, scallions, tamari, sherry, garlic, ginger, and red pepper in a shallow glass dish. Cover and refrigerate for 1 hour, stirring occasionally.
Step 2
Bring the broth to a boil in a large nonstick skillet over medium-high heat. Add the onion and cook for 2 minutes. Add the carrot, cover, and cook for 2 minutes longer. Add the broccoli and cook for 2 minutes, or until the vegetables are tender.
Step 3
Strain the tofu mixture, reserving 2 tablespoons of the marinade. Add the tofu mixture to the skillet; cook and stir gently for 1 minute, or until heated through. Add the reserved marinade and chili oil. Toss well.
