Instructions
Step 1
Preheat the oven: Preheat your oven to 400°F (200°C). Line a shallow baking dish or rimmed baking sheet with aluminum foil for easy cleanup.
Step 2
Make the glaze/marinade: In a medium bowl, whisk together the hoisin sauce, vinegar, sesame oil, garlic, and ginger. You can also add other ingredients like soy sauce or a bit of honey for extra sweetness if desired.
Step 3
Prepare the pork: Pat the pork chops dry with paper towels and season all over with the salt.
Step 4
Marinate (optional): For deeper flavor, place the pork chops in the hoisin mixture, turn to coat, cover, and refrigerate for at least 15 minutes, or up to an hour.
Step 5
Bake: Arrange the pork chops in a single layer on the prepared baking sheet. Spoon the remaining sauce over the pork chops. Bake for 15 to 20 minutes.
Step 6
Broil (optional): For a slightly caramelized top, turn on the broiler during the last 2 to 5 minutes. Position the pan about 5 to 6 inches from the heat source and watch closely to prevent burning.
Step 7
Check temperature: The pork is done when an instant-read meat thermometer inserted into the thickest part of the chop registers an internal temperature of 145°F.
Step 8
Rest and serve: Transfer the pork chops to a cutting board and let them rest for 5 minutes before serving. Drizzle with any pan juices and sprinkle with fresh cilantro.
