Instructions
Step 1
Blanch the spinach in hot water, squeeze out as much water as possible and chop it up.
Step 2
Mix everything (excl. seeds & egg)
Step 3
Cut two quarters of the puff pastry sheet (80g each) (you want 2 long rectangles to be folded over into pastries). Place on baking paper on a baking tray.
Step 4
Put the mixture onto half of each rectangle, leaving a 1cm edge. Brush egg on that edge all around the rectangle.
Step 5
Fold over and pinch the three edges. Fold the edges over and pinch again.
Step 6
Make a couple slits (whichever way you want), brush the whole thing with egg and sprinkle the seeds.
Step 7
Bake on middle shelf at 160°C fan for 15-20 minutes (monitor every couple mins).
