Cretan Cheese Pies

Instructions

Step 1
Start with the dough by combining all the ingredients and kneading with a spoon first and then by hand. Knead for 5 minutes until smooth and let rest for 20 minutes. Once rested roll it out until only a few millimetres thick (½cm or so) and cut out circles
Step 2
Make the cheese filling by mashing together the cheeses, mint and egg with a fork.
Step 3
The dough circles should be about 10cm in diameter. Add 1tbsp of the filling to the middle and close it into a half moon shape. Seal shut with a fork
Step 4
Place in an oven tray, beat an egg and brush the top of the pies with it. Bake for 25 minutes at 180°C - and if not crispy enough broil for a couple minutes at the end
