Instructions
Step 1
1. Add the sliced and chopped chicken to a large bowl and top with cajun seasoning (image 1).
Step 2
2. Mix to ensure all sides are coated with the seasoning (image 2).

3. In a deep large skillet, large pot or dutch oven with high sides, heat oil over medium-high heat. Add the chicken slices and cook (image 3).

4. Cook until golden brown and cooked through, approximately 5 minutes (image 4). Once cooked, transfer the chicken to a plate and set aside.
Step 5
Pour half and half, cottage cheese, 1/3 of the spinach, and the basil on the blender until smooth

Add carrots to the pan with oil on medium heat and soften for 2-3 minutes. Then add onion and cook for 4-5 minutes until both veggies are softer and onion is turning gold. Add garlic and cook for 2-3 minutes more.
Step 7
Cook the sausage until browned in a separate pan

Pour the half and half, basil mixture and the chicken broth in with the veggies
Step 9
Add a few dashes of Cajun seasoning, and 1 tbsp of cayenne pepper
Step 10
Add pasta noodles, ensure they are covered with the sauce, and bring mixture to a boil, then bring temperature to low and cover.
Step 11
Cook for 10-15 minutes, stirring regularly, until noodles are softened and sauce is thicker.
Step 12
Add the Parmesan and spinach and stir well.
Step 13
Add the chicken and sausage and simmer for 2-3 minutes to let the flavor settle.
