For the Steak
460gextra-lean ground beef
raw
¼ cupgluten-free panko bread crumbs
1egg
large
1 Tbspworcestershire sauce
½ tspgarlic powder
½ tspsea salt
or himalayan salt
½ tspground black pepper
1 Tbspghee
organic grass-fed, if possible
4 x 1 ozslices provolone cheese
optional
For the Gravy
Instructions
Step 1
1. To make steak, add beef, bread crumbs, egg, Worcestershire sauce, garlic powder, salt, and black pepper to a medium mixing bowl. Using clean hands, knead gently to combine; form into 4 equal patties. Set aside.
Step 2
2. Melt ghee in a large nonstick skillet over high heat.
Step 3
3. Add patties; cook for 3 minutes. Flip; cook for an additional 3 minutes, or until deeply browned on both sides. Remove patties from skillet.
For the Gravy

4. To make gravy, return skillet to medium-high heat; add ghee and 2 Tbsp. broth. Cook, stirring continuously, until ghee is melted. Add onion; cook, stirring occasionally, for 6 to 8 minutes, or until browned.
Step 5
5. Add flour; cook, stirring frequently, for 2 minutes. Add remaining 1¼ cups + 2 Tbsp. (330 ml) broth, Worcestershire sauce, garlic powder, salt, and pepper; stir to combine. Bring to a gentle boil.
Step 6
6. Add patties; top each with a slice of provolone cheese (if desired). Cover; gently boil for 3 minutes, or until cheese is melted and patties are cooked through. Serve warm.
