Ingredients
8 servings
2 lbchuck roast
or round beef, cut into 1 inch cubes
1 ½ teaspoonsea salt
divided
black pepper
freshly ground, divided
2 Tbbutter
or other preferred cooking fat, divided
2 lbscarrots
peeled & sliced
1yellow onion
diced
1 headgreen cabbage
cubed
4 cbeef broth
2 cwater
0.5 Cred wine
8 oztomato paste
1 teaspoondried rosemary
1 teaspoonthyme
2cloves garlic
minced
onion powder
Instructions
Step 1
To begin, sprinkle the cubed beef with 1 teaspoon each of the salt and pepper
Step 2
Melt the butter over medium high heat in a large Dutch oven. Cook the beef in the hot butter until browned, work in batches so the meat doesn’t steam.
Step 3
Add in all of the remaining ingredients and stir together. Bring the soup to a boil, reduce the heat to a simmer, cover, and cook for 1 hour.
