Instructions

Step 1
Spray a large frying pan with low-calorie cooking spray and place over medium heat.
Step 2
Add the onion and fry for 10-15 minutes until softened and golden.
Step 3
Add the garlic and slices of pork, sealing the pork for 1-2 minutes on each side.
Step 4
Add the mushrooms, stock, Dijon mustard, and mustard powder. Stir and simmer uncovered over medium heat for 25-30 minutes until pork juices run clear. Turn pork halfway through cooking.
Step 5
Remove from heat and stir in reduced-fat cream cheese until blended.
Step 6
Season to taste and stir in flat-leaf parsley before serving.
