Instructions

Step 1
1. Bring the stock to a boil

2. Add minced mushrooms, garlic and onion (if using) and allow to fully disintegrate

3. Add washed rice (black works best but white or brown will do), bring back to the boil, then turn down and simmer for an hour and a half, stirring frequently to prevent sticking.

4. Add more liquid if the congee becomes too thick, or if you like it a little looser.

5. Dish into a bowl and add chopped spring onion, fresh grated ginger, sesame oil and sesame seeds
Step 6
6. Finish with toppings of your choice! Chopped avocado, soft boiled egg, chicken work work well.
