Instructions

Step 1
Preheat your oven to 350°F. Grease a large baking dish with butter. I use a 13x9 deep foil tray.
Step 2
Cook the elbow macaroni until al dente. Drain the pasta and shock with cold water to stop the cooking process.
Step 3
In a large bowl, combine the room-temperature cream cheese with the evaporated milk. Whisk until mostly smooth.
Step 4
Pour in the whole milk, then add salt, Cajun seasoning, mustard powder, nutmeg, cayenne, and paprika. Stir until combined, then add half of each of your shredded cheeses and stir again. Check flavor and adjust as desired.
Step 5
Whisk your beaten eggs into the mixture to help bind everything during baking.
Step 6
In the greased dish, add half of the macaroni to form the base layer, then add half of your mixture. Add half of each of the remaining cheese, then add the freshly ground pepper. Pour the rest of the macaroni on top of this, followed by the rest of the mixture, the rest of the remaining cheese, and add more pepper. Make sure the layers are spread evenly across the entire dish.
Step 7
Bake uncovered for 30-35 minutes, or until the top layer of cheese is bubbly and golden. If desired, broil for 1-2 minutes for a crisper top.
Step 8
Allow the dish to cool for 5-10 minutes before serving.
