Instructions
Step 1
Chop garlic, grate half the courgette and slice the other half, grate the cheese in preparation
Step 2
Cook the garlic and courgette in a pan for a few mins to soften
Step 3
Add the orzo and toast for a couple of minutes
Step 4
Add the stock in a few goes and leave the orzo to cook on medium heat, stirring regularly
Step 5
Once the orzo is soft and the stock has rescued, season with cracked black pepper, stir in the lemon juice and parmesan
Step 6
Serve and top with mozzarella and more pepper and basil
