Step 1
Line dehydrator trays with nonstick mesh sheets lightly coated with cooking oil.
Step 2
Using a peeler, remove just the bright green zest of the lime peel. Reserve rest of lime for another use.
Step 3
Lay out the lime zest strips and slices of turmeric and ginger in a single layer on prepared trays. Dry at 135°F [57°C] for 6 to 8 hours, until the turmeric and ginger slices are crackly dry. Let cool completely.
Step 4
In a spice grinder, pulverize the lime zest, turmeric, and ginger to a fine powder.
Step 5
Store in an airtight container, preferably with a silica gel packet to extend freshness, in a dark place at room temperature for up to 6 months.
Step 6
Place 3/4 tsp Turmeric-Ginger- Lime Powder into a mug. Add 1 cup [120 ml] boiling water and stir to dissolve. Stir in 1 tsp honey, or more to taste. Brighten with a squeeze of fresh lime juice, if desired, before serving. If you want an extra dose of sinus-clearing power, stir the tiniest wisp of cayenne pepper into your drink.
