Instructions
Step 1
Put cold leftover mashed potatoes in a small oven proof dish, coated with non-stick spray.
Step 2
Make Wells for the eggs.
Step 3
Cover with foil.
Step 4
Bake at 375° for 30-35 minutes to desired doneness.
Step 5
Top with anything you like on your eggs or mashed potatoes.
