Curried egg sandwich

A quick & easy lunch idea (you can even meal prep the boiled eggs). Tip: replace half the mayo with Greek yoghurt for a lighter version with extra protein!!

Instructions
Step 1
Boil the eggs in a saucepan of water or air-fryer (12 mins at 150 degrees). Place them in a bowl of ice water to cool & stop them overcooking.
Step 2
Peel and dice the boiled eggs into small pieces, place in a bowl with the remaining ingredients and mix it together.
Step 3
Assemble the sandwich with lettuce and the egg mixture or serve with crackers.
