Red Wine Poached Pears 🍐 🍷 ✨ Ingredients: •1.2 Kg Pears •1 Bottle of Red Wine (Merlot or Cab Sav) •1 Orange (Juice & Zest) •1 Lemon (Only Zest) •1 Cup Caster Sugar + 1 Tbsp (For the Whipped Cream) •3 Star Anise •8 Cloves •2 Cinnamon Sticks •4 Tsp Vanilla Paste (For Poach Liquid & Whipped Cream) •300ml Thickened Cream •1 Packet Ginger Nut Cookies Method: 1.Peel, half and core pears and place into a large pot 2.Cover with wine, sugar, citrus juice and zest, spices, and vanilla paste. Bring to a boil, then reduce the heat and allow to simmer for 20 – 30 mins (or until just soft enough to easily slice with a butter knife) 3.Remove the pears and transfer into a sealable, glass container. Strain the poaching liquid and pour the liquid back over the pears. Allow to cool, then cover and transfer the pears to the refrigerator where they can continue soaking in the flavour overnight 4.The next day, strain the poaching liquid and return the spiced wine to a small pot. Bring to a boil, then simmer until the liquid has reduced to a syrup 5.Whip the cream with 1 Tbsp of sugar and 2 Tsp of vanilla paste 6.Crush the ginger nut cookies in a Ziploc bag with a rolling pin. Just fine enough to be a crumb, but not a powder plate up, dollop some whipped cream into a bowl, place two halves of the poached pears on top, sprinkle with gingernut crumb and finish with a drizzle of syrup 8.Enjoy!
