1. Cook the potatoes in a pan of lightly salted water bring to the boil and simmer for about 15 mins or until tender enough to mash.
2. Heat the milk and the bay leaf in a pan and add the dish pie mix. Poach for about 10 mins or until the fish is cooked through. Preheat the oven to 180°C/350°F/Gas Mark 4.
3. Sauté the leek and onion on medium heat for about 5 mins. Add the garlic for the last couple of minutes of cooking.
4. Remove the poached fish from the milk with a slotted spoon. Place the fish in a rectangular ovenproof dish with the cooked vegetables. Remove the bay leaf from the milk.
5. In the frying pan melt the butter, add the flour and stir vigorously to makeca roux. Slowly add the fish milk (reserving 3-4 tbsps of the milk for the mash) stirring continously to make the sauce. Add the doll to the sauce and stir in. Allow the sauce to simmer, stirring frequently, not thicken up.
6. Mash the potatoes with the remaining milk and season with a pinch of salt & pepper.
7. Pour the sauce over the fish. Then spread the mash over the top. Using a fork make the surface of the potato rough (this will help the potato come out nice and crispy).
8. Cook in the oven for about 15-20 minutes or until the potato topping is crispy and golden brown. Serve with veg of your choice.
