Super-simple Chicken Sweetcorn Soup — still delicious, very quick, and all blender-friendly. --- ⭐ Ultra-Cheap Chicken Sweetcorn Soup Serves: 2
Cost: Very low
Time: 10–15 minutes 🥕 Ingredients (Budget Version) 1 can sweetcorn (or 1 cup frozen corn) 1 stock cube (chicken or vegetable) 1–1½ cups water ½–1 cup cooked chicken scraps Use leftover roast, sandwich chicken, or even deli chicken ends — whatever you have. 1 tbsp cornflour (optional but cheap, helps thicken) Salt & pepper (Optional cheap add-ons: 1 egg for silky texture, ½ teaspoon soy sauce packet if you have one.) --- 🍲 Instructions 1. Blend the base Add to a blender: Half the sweetcorn ½ cup water
Blend until smooth — this makes the soup “creamy” without using cream. 2. Make the soup In a pot: Add the blended corn Add the rest of the sweetcorn Add 1 cup water Add the stock cube
Heat to a simmer. 3. Add chicken Stir in whatever chicken bits you have Simmer for 2–3 minutes 4. Thicken (optional but makes it better) Mix: 1 tbsp cornflour + 2 tbsp water
Stir into the soup. 5. Season Salt & pepper to taste
