Instructions
Step 1
In a large pot or Dutch oven over medium heat, add the Italian sausage. If using lean sausage, you may want to add a tablespoon of olive oil. Cook until browned, breaking it up into smaller pieces with a spoon, about 5-7 minutes. Drain excess fat if necessary.
Step 2
Add the diced onion and minced garlic to the pot. Sauté for about 2-3 minutes until the onion is translucent.
Step 3
Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine.
Step 4
Add the rigatoni pasta and Italian seasoning. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed.
Step 5
Once the pasta is cooked, stir in the grated Parmesan cheese. Taste and adjust seasoning with salt and pepper as needed.
Step 6
Serve hot, garnished with fresh basil or parsley if desired.
