Step 1
Grate zucchini and squeeze out moisture.
Step 2
Beat eggs with brie cheese.
Step 3
Combine everything and add extra coconut flour, 1 tsp at a time as needed if mixture is too wet.
Step 4
Pan fry in oil of your choice, pressing flat as you place blobs of mixture into pan. Using two spoons can make this process easier.
Cook until golden on each side.
Drain on paper towel as soon as removed from pan.
