Instructions

Step 1
Preheat your oven to 220°C / 425°F and line a baking tray with baking paper.
Step 2
Pat dry your tofu, you can also press it with a tofu press or under heavy pans but really if you have extra firm tofu it should be fine. Chop it into cubes and place it on the prepared baking tray. You can also just rip it into chunks like a caveman. I support that.
Step 3
Douse the tofu in the vinegar tossing the tofu on the tray to ensure it is covered.
Step 4
Mix all the dry ingredients in a separate bowl. Sprinkle over the dry ingredients and make sure they tofu each coated on each side. The vinegar should help it stick. The original recipe creator Cassidy points out that coating the tofu while on the baking tray as opposed to a seperate bowl ensure more seasoning will stick to the tofu as opposed to the walls of the bowl. Clever lady :) Also less dishes! Yay lazy.
Step 5
I used an oil sprayer (below) to add a fine layer of oil to the tofu. If you don’t have one just drizzle it over the top and use your hands to mix it in. The original recipe had 2 teaspoons of oil but I reduced it as I wanted less fats and calories, fee free to add it back in.
Step 6
Bake for 25-30 mins giving it a flip half way through. Eat!
