Ingredients

Batter
16 ozricotta cheese
1 cupbutter
softened
2 cupssugar
3eggs
1 teaspoonbaking soda
½ teaspoonvanilla extract
½ teaspoonsalt
4 cupsflour
Icing
Instructions
Batter
Step 1
Preheat oven to 325°.
Step 2
Mix butter, sugar, eggs and vanilla extract.
Step 3
Mix in ricotta cheese, baking soda and salt. Slowly add flour and mix well. Becomes like dough.
Step 4
Drop from teaspoon onto ungreased cookie sheet.
Step 5
Bake 8 – 12 minutes. Bottom should be light brown and top should be set and dry looking.
Icing
Step 6
Mix all ingredients together until creamy and slightly thick.
Step 7
Ice cookies when they have cooled. (Freeze extra icing)
Step 8
Sprinkle with cinnamon while icing is soft. Let sit overnight.
