Instructions

Step 1
Scoop 12 tbsp sized blobs of cookie butter onto a parchment lined baking sheet, freeze for 1 hour or until completely frozen.
Step 2
Cream together softened butter, brown sugar, and sugar.
Step 3
Mix in egg, egg yolk, and vanilla extract.
Step 4
Fold in flour, baking soda, and salt.
Step 5
Mix in biscoff cookies and chocolate chips, then place dough in the fridge to chill.
Step 6
While the dough chills, preheat the oven to 350.
Step 7
Once the oven is ready, take the dough and cookie butter out. Using a 2oz cookie scoop, scoop the dough. Create a well in the center of the dough using your finger, and place a blob of cookie butter inside. Cover it up with more dough and place on a lined cookie sheet.
Step 8
Bake at 350 for 10-12 minutes.
