Beef and Bean Chili

Ingredients

2 spraycooking spray
1 poundsirloin beef
uncooked lean trimmed
2 tspolive oil
1onion
medium uncooked, diced
2 ribcelery
medium, uncooked, diced
2 clovegarlic clove
medium, minced
1jalapeño pepper
small, seeded and minced
2 Tbspchili powder
2 tspground cumin
1 tspdried oregano
2 leafbay leaf
½ tsptable salt
½ tspred pepper flakes
or more to taste
28 ozcanned crushed tomatoes
1 cupcanned beef broth
reduced-sodium
8 ozcanned tomato sauce
30 ozcanned kidney beans
rinsed and drained
celery
garlic
jalapeño
Instructions
Step 1
Add oil to pot; set over medium-high heat. When oil begins to shimmer, add onion, celery, garlic and jalapeño; sauté until tender, about 4-6 minutes.
Step 2
Add Beef to Pot and break up; set over medium-high heat. Add beef; cook until browned, breaking up meat as it cooks, about 5 minutes.
Step 3
Add chili powder, cumin, oregano, bay leaves, salt and red pepper flakes; stir to coat vegetables and beef with spices. Add tomatoes, broth, tomato sauce and beans; bring to a slight boil, making sure you don’t burn what is settled at bottom. Reduce heat to low and simmer, partially covered, for 30-60 minutes.
