Instructions

Step 1
Preheat oven to 350°F. Prepare a 3-quart casserole dish with nonstick cooking spray.
Step 2
Prepare pasta according to package directions to 2 minutes from al dente. Drain and place in prepared dish.
Step 3
In a large skillet over medium-high heat, add beef and cook until crumbled. Season with taco seasoning and add water. Simmer until slightly thickened, then pour into dish.
Step 4
Add tomatoes with juices, beans, mixed vegetables and 1 cup cheese to the dish. Toss until combined
Step 5
Sprinkle with remaining 1 cup cheese and bake 20-35 minutes, until hot and cheese is melted.
Step 6
Serve and refrigerate leftovers
