Instructions

Step 1
Grate the Zucchini: Use cheese grater to spread the zucchini. Do not squeeze the water out; you want that liquid to help volumize the oats

Combine & Cook (Stovetop Method - Recommended for max volume): In a non-stick pot, add the oats, grated zucchini, water/broth, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 3–4 minutes until the oats have absorbed most liquid and are thick.
Step 3
Add Protein (The "Whip" Trick): Pour in the egg whites slowly while stirring constantly and vigorously. Tip: Do not stop stirring! This prevents the eggs from scrambling into chunks and instead whips them into the oats, making the texture creamy and fluffy like porridge.
Step 4
Finish: Once the mixture is thick and fluffy (about 2–3 more minutes), stir in the spinach until wilted. Remove from heat. Top with black pepper or hot sauce.
