Scrambled Eggs with Tomato Goat Cheese and Mint
Fresh mint gives this egg dish an exotic Middle Eastern or Mediterranean flair. Crumbled feta cheese would make a robust substitution for the milder goat cheese. For a complete meal, accompany the eggs with sliced cucumbers, fresh olive bread, and honey-drizzled fresh or dried figs, and pour sweetness black tea.

Instructions
Step 1
Whisk eggs in large bowl to blend.
Step 2
Add tomato, goat cheese, green onions, hopped mint, salt, and pepper. Whisk to blend.
Step 3
Melt 1 tbsp butter in 12 inch nonstick skillet over medium heat.
Step 4
Add shallots. Sauté 3 minutes. Add remaining 2 tbsp butter to skillet and let melt.
Step 5
Add egg mixture. Cook 2 minutes without stirring. Using spatula, gently stir and turn over portions of the egg mixture until softly set, about 4 minutes.
Step 6
Divide scrambled eggs among 4 plates. Garnish with mint sprigs, if desired, and serve.
