Ingredients

2chicken breasts
large, cubed
1 cuprice
2 cupschicken broth
1onion
small, finely chopped
3garlic cloves
minced
1red pepper
chopped
2 Tbsptomato paste
0.5fresh tomato
leftover half tomato because we don’t waste anything in this house
1 Tbspolive oil
1bay leaf
1 tspsweet paprika
¼ tspsmoked paprika
optional
1 Tbsppimenta moída
Salt
pepper
to taste
½ cuppeas
added at the end
parsley
for garnish
Instructions
Step 1
1. Season chicken with salt, pepper, sweet paprika, and optional smoked paprika.
Step 2
2. Heat olive oil and sear the chicken until lightly golden. Remove and set aside.
Step 3
3. Add onion, garlic, and red pepper. Cook until softened.
Step 4
4. Add tomato paste and cook for 1–2 minutes to deepen the flavour.
Step 5
5. Add the ½ tomato, letting it melt into the base.
Step 6
6. Stir in the rice, bay leaf, and pimenta moída.
Step 7
7. Pour in the broth, add the chicken back in, stir, and bring to a simmer.
Step 8
8. Cover and cook on low 15–18 minutes until the rice is tender.
Step 9
9. Add peas, fluff, garnish with parsley, and serve
