Instructions

Step 1
Steam or boil green beans in salted water until crisp-tender. Transfer to an ice bath to stop the cooking and drain.
Step 2
Add 1 tablespoon olive oil to a non-stick skillet on medium heat. Add pancetta and shallots to the skillet. Sauté until pancetta is crisp. Add sage and stir until fragrant. Transfer pancetta mixture to a bowl.
Step 3
Heat remaining 1 tablespoon olive oil in the same skillet over medium-high heat. Add green beans and sauté until heated through. Add the pancetta mixture, season with salt and pepper and toss to combine.
