For the Turkey Mince:
900gturkey mince
or grass-fed beef mince
30mlolive oil
6cloves garlic

1 teaspoonmixed dried herbs
rosemary, oregano
¼ teaspoonturmeric powder
¼ teaspoonblack pepper
½ teaspoonsweet paprika
not smoked
2 tablespoonsfresh parsley

1 tablespoonfresh rosemary

0.5juice of lemon
For the Creamy Garlic Sauce:
200mllow-fat Greek yogurt
120mllow-sodium chicken broth
or turkey
10mlDijon mustard
¼ teaspooncrushed red pepper flakes
optional
2 tablespoonsnutritional yeast
for umami depth
½ teaspoongarlic powder
For the Potatoes:
Instructions
Step 1
Roast the Potatoes: Preheat oven to 200°C (400°F). Toss cubed potatoes with 2 tablespoons olive oil, pepper, garlic powder, and dried rosemary. Spread on parchment-lined baking tray. Roast for 28-32 minutes, flipping halfway, until golden and crispy.
Step 2
Cook the Turkey Mince: Heat 2 tablespoons olive oil in large nonstick pan over medium heat. Add minced garlic and sauté 30 seconds until fragrant. Add turkey mince, breaking it up with wooden spoon. Season with mixed herbs, turmeric, pepper, and paprika. Cook 8-10 minutes, stirring occasionally, until fully cooked and lightly browned.
Step 3
Make the Creamy Sauce: In the same pan with cooked mince, reduce heat to low. Stir in Greek yogurt, low-sodium broth, Dijon mustard, garlic powder, and nutritional yeast. Whisk until smooth. Simmer 2-3 minutes until slightly thickened. Add red pepper flakes if desired.
Step 4
Finish the Dish: Stir fresh parsley, rosemary, and lemon juice into the turkey mixture. Taste and adjust seasoning if needed (remembering salt limits).
Step 5
Add Cheese to Potatoes: Once potatoes are roasted, immediately sprinkle the lactose-free cheddar over them while hot, allowing it to melt.
Step 6
Assemble: Divide cheesy potatoes and creamy garlic turkey evenly into 6 meal prep containers. Garnish with fresh parsley and optional smoked paprika.
