Instructions

Step 1
Make dough recipe from scratch, make sure to leave in fridge for 30 min before making. Use a tortilla press. You'll need to press once to get the shape and then again right before assembly. https://www.laylita.com/recipes/how-to-make-empanada-dough/

Chop the flank steak into cubes and marinate while you chop and prep the rest

Chop the onion and garlic
Step 4
Heat the cast iron to medium heat. Once hot, add the finely chopped red onion and garlic. Cook on medium until very soft, beginning to brown and carmelize. Once done, remove into a glass bowl.
Step 5
Now heat the cast iron on high until it's very hot. Then add more oil, add the finely chopped marinated steak to the cast iron. Leave it until one side starts to brown. Flip over once. Put the onions and garlic back in. Remove everything into a bowl once everything is brown and cooked to medium rare.
Step 6
Take the dough out of fridge and use a tortilla press to make into circles
Step 7
Stuff circles with cooked steak and cheese. Close em up.
Step 8
Bake at 400F roughly 18-25 min. You'll know is done when crust is somewhat firm (i.e. not total mush), but before it gets too hard.
