1 cupnon-dairy milk
½ Tbsplemon juice
2eggs
oil
2 tspvanilla extract
2 cupsflour
1 cupsugar
2 tspbaking powder
½ tspsalt
Streusel Crumb
Instructions
Step 1
Preheat oven to 350°F.
Step 2
In a 9 x 13-inch baking pan, combine milk and lemon juice. Let sit for 1-2 minutes.
Step 3
Whisk in eggs, oil, and vanilla.
Step 4
Add flour, sugar, baking powder, and salt.
Step 5
Use a spatula to fold wet and dry ingredients together.
Step 6
In a second pan or bowl, combine all streusel ingredients; mix to form crumbs. Add crumbs over batter.
Step 7
Bake for 35-40 minutes, or until center is just set. Do not overbake. Let cool; dust with confectioners' sugar.
