Instructions

Step 1
Prep: Preheat your oven to 180°C (160°C fan) and line a square baking tin with parchment paper.
Step 2
Mix Wet Ingredients: In a large bowl, whisk together the olive oil, honey, nut butter, and vanilla until smooth.
Step 3
Combine: Stir in the oats, ground almonds, chopped nuts, flaxseeds, and cinnamon until all dry ingredients are thoroughly coated.
Step 4
Press Down: Spoon the mixture into the tin. Crucial Step: Use the back of a spoon to press the mixture down firmly and evenly; this ensures the flapjacks hold together after baking.
Step 5
Bake: Bake for 20–25 minutes until the edges are golden brown.
Step 6
Cool & Slice: Allow the flapjacks to cool completely in the tin before slicing. Slicing while warm can cause them to crumble.
