Instructions
Step 1
Preheat oven to 350°F. Line baking sheets with parchment paper.
Step 2
Cream butter and sugars until thick and smooth (about 1–2 minutes).
Step 3
Mix in egg, egg yolk, and vanilla extract.
Step 4
Add dry ingredients and mix just until combined. The dough will be very thick and slightly sticky.
Step 5
Fold in peanut butter cups (and chocolate chips if using).
Step 6
Scoop 2-2 tablespoons of dough per cookie. Roll lightly and stack dough tall — do not flatten.
Step 7
Bake for 9-11 minutes. Edges should look set, centers soft and slightly shiny.
Step 8
Let cool on the pan for 10 minutes to set the outside while keeping the center gooey.
