Instructions

Prepare the Filling:

Step 1
Heat 1 Tbsp of olive oil in a skillet over medium heat.
Step 2
Add the onions and mushrooms; cook until the vegetables are soft and any released moisture has evaporated, about 8-10 minutes. Season with salt, pepper, oregano, and basil.
Step 3
Add the minced garlic and cook for another minute until fragrant.
Step 4
Remove the skillet from the heat and let the mixture cool.

Butterfly and Flatten Pork Loin:

Pat the pork loin dry with paper towels.
Step 6
Using a sharp knife, make a lengthwise incision 1/2 inch thick across the bottom of the loin, maintaining 1/2 thickness to "Unroll" the loin.
Step 7
Cover the unrolled pork with plastic wrap and pound it to a consistent flat 1/2 inch thickness.

Stuff and Roll the Loin:

Step 8
Remove the plastic wrap and season the inside of the flattened pork with RUB.
Step 9
Spread the cooled mushroom and onion. Sprinkle Pizza Cheese evenly over the entire surface of the pork. Then Lay out Basil Leaves and Roasted Red Pepper.

Starting from ending cut side, tightly roll the pork loin to enclose the filling.

Tie and Season the Roast:

Secure the rolled loin tightly at intervals with butcher's twine to maintain its shape during cooking.
Step 12
Brush the outside of the rolled roast with a little olive oil and season well with salt and pepper.

Cook the Pork:

Preheat your oven to 350°F (175°C).

Brown all sides of Roast, especially the fat cap! In a Large Skillet with tablespoon of oil at medium-high heat. (should take 11 minutes)

Wrap Tightly in crinkled up Parchment Paper then in Aluminum Foil.

Place the pork in a baking dish or roasting pan. An oven-safe thermometer inserted into the thickest part of the roast will help monitor the temperature.

Roast for 1 hour, or until the internal temperature reaches 145°F (63°C).

To get a crispier exterior, you can roll back the foil and parchment after the hour. Spread Glaze of your choice on roast then Cook uncovered for 10-15 min.

Rest and Serve:

Remove the pork from the oven and let it rest for at least 10-15 minutes before slicing. This is crucial to keep the meat juicy.

Remove the twine as you go. Slice the rolled loin into 1/2"-5/8" rounds, and serve warm.
