Instructions

Step 1
Start with 2 mixing bowls, first bowl for the wet ingredients add 3-4 very ripe Bananas if looking for design in the picture cut one Banana long ways and keep to one side, add 2 large eggs, 60mls of melted coconut oil and as much honey for sweetness 2-3 teaspoons should be plenty. Whisk and mash until all combined but do not over mix.

Step 2
For the dry mixing bowl add 100g of plain flour and 100g of wholemeal flour 1/2 teaspoon of baking powder and 1 teaspoon of baking soda 1 teaspoon ground cinnamon and a pinch of sea salt mix until fully combined. Slowly add the dry mixture to the wet a bit at a time until fully combined

Step 3
Optional step, fillings this is the point where you add and fillings you want, frozen fruit, chocolate chips, dried fruit etc... add just enough and fold it in, if putting frozen fruit take out of freezer now and just lightly coat with a thin layer of plain flour to stop it all sinking to the bottom

Add this mixture to a grease lined tin and if you want the Banana slice for decoration place on top and gently push it down level with the top of the mixture. Put this dish in a pre heated oven gas mark 4 for about an hour check with a clean toothpick in the centre it should come out clean if not another 5-10 minutes and check again the time will depend on the filling and the amount of Bananas but on average 50-70 minutes it will be done. Take out the oven and let cool before slicing
