Instructions

For the yeast mixture, in a bowl combine lukwarm milk, instant yeast, sugar and flour. Mix well and set aside for 10 minutes.

For the pastry: In a large bowl whisk together 2 eggs, sugar, salt, and vanillin. Add melted butter, lemon zest, and yeast mixture. Mix until combined. Then add the flour and mix again until combined. Transfer to the work surface dusted with the flour, and knead until soft and elastic ( about 8 minutes ). Form a ball and place in a bowl, greased with olive oil. Cover with a towel and let rise in a warm place for 1-1,5 hours.

Meanwhile, prepare the filling. In a food processor blend poppy seeds and sugar. Transfer it to a saucepan, and add milk and vanilla. Bring it to a boil and continue to cook on low heat until the milk evaporates and you get a paste consistent( about 40min-1hour). When ready, remove from the heat and stir in butter.

When dough doubles in size, transfer to the floured surface and knead for another 3-5 minutes. Divide by 3 equal parts. Shape each part into a ball then roll out into a 30 cm circle. Transfer one dough circle onto a baking sheet lined with parchment and spread 1/2 of poppy seed filling,leaving a 1cm border. Repeat with the next dought circle placing it on the top of the filling and cover with the third circle.

Using two hands twist two strips away from each other two times. Pinch the strips together. Repeat with the rest strips to create a star shape.

Cover with a cling film and let rest for 20 minutes to raise. Brush the star with a slightly beaten egg yolk, mixed with 1tbsp milk. Bake in preheated oven at 180°C for 25-30 minutes until golden brown.
