Instead of a protein bar, why not a protein cookie? This recipe is a direct copycat of the Quest Protein Cookies, having the exact same macros for a fraction of the price and ingredients list. I'm making just 1 cookie today, but you can easily scale this up to make a larger batch

Preheat your air fryer to 300F

In a small bowl, microwave coconut oil for 30 seconds, until melted
Step 3

Mix in the protein powder, monk fruit, inulin, baking powder, salt, vanilla extract, and almond milk with a silicone spatula
Step 4

Transfer your cookie dough to a small piece of parchment paper. Flatten to a 1/4" circle. Press the chocolate chips into the top
Step 5

Air fry at 300F for about 10 minutes, or until lightly golden
