Instructions
Bechamel Mother Sauce
Step 1
Use equal parts flour and butter: melt butter in pot and stir in flour over medium heat for 5 - 10 minutes. It should resemble wet sand.
Step 2
Heat up some milk - be careful not to boil it.
Step 3
Place the Roux back on the stove over low heat and incorporate the milk adding in small amounts at a time until desired consistency is achieved. Add some salt to taste.
Mornay Sauce
Step 4
Take the Bechamel sauce and some cheese into the sauce over low heat whisking in the cheese until combined.
Soubise Sauce
Step 5
Sweat down some onions until translucent and add to a blender with the Bechamel Sauce and blend until smooth.
Aurora Sauce
Step 6
Add to the Bechamel Sauce about 20% tomato passata and stir until well combined.
