Shrimp Caesar Salad with Parmesan Crisps

Instructions

Step 1
Preheat oven to 425°F.
Step 2
Onto a foil or parchment lined sheet tray sprayed with cooking spray, add the shrimp in a single layer. Spray shrimp with cooking spray and sprinkle with a third of the parmesan cheese (4 tablespoons for 4 servings).
Step 3
Onto a second silicone or parchment lined sheet tray, pile tablespoons of Parmesan cheese about ½-inch apart, for a total of 2 mounds per serving. Lightly pat the mounds down with the back of a spoon.
Step 4
Place both sheet trays in the oven. Roast the shrimp until pink, about 15 minutes and the Parmesan until golden and crisp, about 3 to 5 minutes. Remove both from oven and let cool.
Step 5
To assemble, toss together the romaine, arugula, and celery. For each serving, place 2 cups of the lettuce mix on a plate and top with 9 to 10 roasted shrimp. Garnish with 2 Parmesan crisps and ground black pepper (optional) and drizzle with 2 tablespoons Caesar Dressing.
