Instructions

Step 1
Preheat oven to 450 degrees
Step 2
Beat egg with salt and pepper
Step 3
Mix Panko, Parmesan and Garlic Powder.
Step 4
Pound breast halves flat to about 1/2 inch.
Step 5
Flour breast halves well and shake off excess.
Step 6
Dip a flour-coated chicken breast in beaten eggs. Transfer breast to the panko mixture, pressing crumbs into both sides. Repeat for each breast. Let chicken rest for 10 to 15 minutes.
Step 7
Heat 1/4 inch of cooking oil in a large skillet over medium to medium-high heat until it begins to shimmer.
Step 8
Cook chicken until golden, about 2 minutes per side. Do not crowd the skillet!
Step 9
Transfer chicken to a baking pan lined with parchment.
Step 10
Top each breast with 1/4 cup tomato sauce. Layer each breast with pizza cheese, 1/2 tablespoon basil and 1/2 tablespoon Parmesan. Drizzle each with 1/2 teaspoon olive oil.
Step 11
Bake in the preheated oven until cheese is browned and bubbly for 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let chicken rest while getting spaghetti, toasted garlic bread or whatever you wish on plate.
